You can create your product types through the Catalog section > Product Types > Create Product type:
Once you click on the Create Product type button, you will be directed to a new window where you'll need to add the product type name, and then add the attributes already created in your store to the respective product type:
After creating the product type and adding the desired attributes to it, you can also add them to your products. When you go to the product's detail page and click on attributes, all created product types in your store will be displayed from the dropdown menu.
You now have created product types, which will help you group various attributes to a specific product.
